Sausage & Bean Casserole

Ingredients

  • 8 pork sausages
  • 1 onion, sliced; 2 garlic cloves, sliced
  • 400g tin chopped tomatoes
  • 400g tin cannellini or haricot beans, drained
  • 250ml chicken stock; 1 tbsp tomato purée; 1 tsp smoked paprika
  • 1 tsp dried mixed herbs; crusty bread, to serve

Method

  1. Brown the sausages all over in a little oil; remove.
  2. Soften the onion and garlic in the same pot for 8 minutes.
  3. Add the tomato purée, paprika, tomatoes, stock, herbs and beans; return the sausages.
  4. Simmer gently, half-covered, for 35–40 minutes until thick and rich — or transfer to a slow cooker on low for 6 hours.
  5. Serve with crusty bread for dunking or a proper pile of mash.
