Ingredients
- 8 pork sausages
- 1 onion, sliced; 2 garlic cloves, sliced
- 400g tin chopped tomatoes
- 400g tin cannellini or haricot beans, drained
- 250ml chicken stock; 1 tbsp tomato purée; 1 tsp smoked paprika
- 1 tsp dried mixed herbs; crusty bread, to serve
Method
- Brown the sausages all over in a little oil; remove.
- Soften the onion and garlic in the same pot for 8 minutes.
- Add the tomato purée, paprika, tomatoes, stock, herbs and beans; return the sausages.
- Simmer gently, half-covered, for 35–40 minutes until thick and rich — or transfer to a slow cooker on low for 6 hours.
- Serve with crusty bread for dunking or a proper pile of mash.
Oven temperatures are given in Celsius, Fahrenheit, fan and gas mark throughout. Quantities are metric, as cooked and written in the UK.
