The Prawn Cocktail
Cold sweet prawns in Marie Rose sauce over shredded lettuce — the starter that built a thousand Berni Inns and is once again, defiantly, cool.

Ingredients
- 300g cooked peeled prawns, well drained
- Marie Rose: 5 tbsp mayonnaise, 2 tbsp ketchup, dash of Worcestershire sauce, squeeze of lemon, splash of brandy (optional)
- ½ crisp lettuce, finely shredded
- Pinch of cayenne
- Buttered brown bread triangles, to serve
Method
- Stir the sauce ingredients together and fold through the prawns.
- Divide the lettuce between chilled glasses or coupes.
- Spoon over the prawns and dust with cayenne.
- Hang a few whole prawns over the rim, serve with brown bread triangles, and own the retro.
