Morecambe Bay Potted Shrimps
Tiny brown shrimps sealed beneath spiced, clarified butter — the taste of Morecambe Bay, served with hot toast for the butter to melt into.

Ingredients
- 400g cooked brown shrimps (peeled)
- 150g unsalted butter
- ¼ tsp ground mace; pinch of cayenne; ¼ tsp grated nutmeg
- Juice of ½ lemon; salt and white pepper
- Hot buttered toast, to serve
Method
- Melt the butter gently and let it settle; skim off the foam and pour off the clear butter, leaving the milky solids behind.
- Warm the shrimps in the clarified butter with the mace, cayenne, nutmeg, lemon and seasoning for 2 minutes — do not cook them.
- Pack into ramekins and seal with the remaining butter.
- Chill until set, then bring back to cool room temperature before serving with hot toast.
