Jam Roly-Poly
Suet pastry rolled around raspberry jam and steamed until pillowy — the school-dinner legend known affectionately everywhere as “dead man’s arm”.

Ingredients
- 250g self-raising flour; 125g shredded suet; pinch of salt
- 150ml cold water; 6 tbsp raspberry jam
- 1 tbsp milk; custard, to serve
Method
- Mix the flour, suet and salt; bind with water to a soft dough.
- Roll into a 20×28cm rectangle; spread with jam, leaving a border.
- Roll up from the short side like a Swiss roll.
- Wrap loosely in buttered, pleated foil, sealing the ends.
- Steam for 1½ hours until well risen and cooked through.
- Slice into thick spirals and serve with an irresponsible amount of custard.
