Bread & Butter Pudding

Buttered bread layered with sultanas and baked in nutmeg custard until the top crisps — thrift turned into one of the most comforting puddings in the canon.

Bread & Butter Pudding

Ingredients

  • 8–10 slices day-old white bread, buttered
  • 75g sultanas
  • Custard: 500ml whole milk, 100ml double cream, 3 eggs, 75g caster sugar, 1 tsp vanilla
  • Grated nutmeg; 2 tbsp demerara sugar
  • Extra custard or cream, to serve

Method

  1. Cut the buttered bread into triangles and layer in a buttered baking dish, scattering sultanas between the layers.
  2. Whisk the custard ingredients and pour over; press the bread down gently and rest 30 minutes to soak.
  3. Grate over nutmeg and scatter with demerara.
  4. Bake at 180°C / 350°F (fan 160°C, gas 4) for 35–40 minutes until puffed, golden and just set.
  5. Rest 10 minutes, then serve with yet more custard. This is not the time for restraint.
