Braised Red Cabbage with Apple

Ingredients

  • 1 red cabbage (about 1kg), finely sliced
  • 2 Bramley apples, chopped
  • 1 onion, sliced
  • 25g butter
  • 3 tbsp red wine vinegar; 2 tbsp soft brown sugar
  • ¼ tsp each ground cinnamon, cloves and nutmeg; salt

Method

  1. Layer everything into a heavy casserole with generous seasoning.
  2. Dot with butter, lid on, and braise at 150°C / 300°F (fan 130°C, gas 2) for 1½–2 hours, stirring once or twice.
  3. It should emerge silky, sweet-sour and deeply purple.
  4. Serve with roast pork, goose or game — and note it improves made a day ahead.
